Can Sauerkraut Really Help You Lose Weight?

Sauerkraut has suddenly become a social-media diet trend. Some people claim that this fermented cabbage can “boost metabolism,” improve the gut, reduce inflammation, and even help you lose weight. But how much of this is actually supported by science?

Sauerkraut is a nutritious, low-calorie food that contains fiber and is produced through fermentation. These characteristics make it an interesting part of a balanced diet. But that does not mean sauerkraut itself is a weight-loss treatment.

There is currently no strong evidence that eating sauerkraut alone causes meaningful weight loss. One study included sauerkraut as part of a calorie-restricted diet of about 1100–1300 calories per day, but several other foods and dietary changes were included too. This means the weight loss could not be attributed to sauerkraut itself.

Scientists are still studying fermented foods and the gut microbiome. Recent research has investigated whether regular sauerkraut consumption affects inflammation, blood pressure, and other health markers, but the evidence is still developing. A 2026 randomized crossover trial found some modest changes in blood pressure and selected markers, but did not find an appreciable overall systemic health benefit after four weeks.

There is another reason to be careful: sauerkraut can contain quite a lot of sodium. People with conditions such as high blood pressure, heart failure, or kidney disease may need to pay particular attention to their sodium intake.

So, should you stop eating sauerkraut? Not at all. It can be a tasty, low-calorie addition to a balanced diet. Just don’t expect one “superfood” to do the work of an entire healthy lifestyle. When it comes to weight loss, the science is much less exciting than social media — and that’s exactly why checking the evidence matters.
